The Outside-in adventure
We’ve been at the food court now for two months and like most things it always turns out being harder than first expected. With a change of senior management from the get-go and lockdown restrictions being lifted in our first week its been a tough two months.
Our goal has never changed since setting up our little kitchen here, high welfare locally sourced meat all cooked over live fire. What has changed is of course the menu. At first, we wanted to offer the guests a choice, you choose your meat and then you can choose one of our lovely side orders to go with it. This is exactly how we would eat visiting a street food market and coming out the other side angry with ourselves that our stomachs were too full to try everything else that we wanted to try. But, and there is a but… Not everyone eats like us so of course our menu must fit with the market we are catering for.
Of course, were still sticking to our guns regarding produce but we have decided to make our dishes a little bit more complete all with a street foodie style and we are really excited about it.
We’re hoping that as things get back to normal and foot-fall increases we can get a little bit more adventurous with our fire pit cooking, adding some fish to the menu and some other really exciting cuts of meat and local vegetables.
Our next challenge will of course be Christmas and we have already started planning some Christmassy dishes all cooked over the fire pit and listening to Christmas songs all day, every day.
